The dish I created for the fantastic food fair was a true replication of my family’s heritage, a Sicilian Pizza! This simplistic dish was always made during my family’s life in Sicily, in a little town called Passopisciaro (located in red). Made with simple and unique ingredients from Sicily, such as Sicilian Olives, it holds tremendous regional importance.


As Sicily was a very religious region, when preparing the dough, the sign of the cross would be cut and then flour sprinkled over it; so that the dough would rise high and the food be blessed.

The day before the fair, I woke up at 5:30am and prepared the dough from scratch. When I was younger, I use to help Nonna the dough. I loved getting my hands dirty.
After uni, I finished off the cuisine by putting the toppings and sauces on! This dish made me reminisce of the double orality of cooking. However, I had trouble with proportions of ingredients. My Nonna rarely used a recipe as the dish can be made with so many variations that there isn’t one right way to make this dish, they had so much practise they knew the dish inside and out!
But Nonna would still be proud!
The pizza was presented in a lovely container, accessible to everyone. I was really satisfied with how it turned out! The dough was fluffy and big, just like Nonna use to make it!


Everybody absolutely loved the soft texture of the dough and the sweet sauce! Overall the food fair was a success! I had so much fun on the day as well as during the whole subject, the content was super engaging and the academics were really nice!
Thank you for a memorable 2 weeks! I will never forget it!
